Sausage and Sauerkraut – My Mom’s Way

imageIn our family we don’t have a holiday “meal,” we have a holiday “feast” or “smorgasbord.”  That means three or more meat dishes.  (And, no, we really don’t feed an army of relatives – just eat a lot of left overs – which is why it helps to make things you really like a lot.)

I like to bring dish this because it’s easy and can be made a day or two ahead, plus our family loves it.  And, I’ll tell you a secret – I make a double batch for Thanksgiving, freeze half and serve that for Christmas.

1 package of sauerkraut – I prefer the bag in the refrigerator section – but canned will do fine.

Kielbasa Sausage – I get a 2-3 pound package because we like lots of sausage.

Medium onion – cut up (adjust the amount to your taste).

1/4 cup brown sugar – packed

That’s it four ingredients – one frying pan.

Cut sausage into bite size pieces and brown in frying pan – stirring often so nothing gets too brown.

Before it’s completely browned, put onion piece in frying pan and continue to brown.  Degree of browning is up to your personal taste.

Pour in bag or can of sauerkraut – juice and all.

Add brown sugar to suit your taste and mix in well.

Cook over low heat for maybe five to ten minutes – stirring often.

Eat and Enjoy!
