Preservative Free Peanut/Almond Butter

imageIt’s that time of year.

After indulging in too many holiday treats, it’s time to think about a more healthy diet.  I put all my Christmas gift cards together and bought myself a Vitamix.  I love it already.  (And, I am not being compensated in any way by the Vitamix people.)  Right away, I decided to give it the ultimate test – blend something with no liquids that I would never have been able to blend in my old blender.  Peanut butter seemed like a good choice.  I already had a bag of raw salt-free almonds in my cabinet, so I bought a bag of salted peanuts.  Here’s what I did:

Peanut/Almond Butter Recipe (Two simple ingredients)

2 cups salted peanuts

2 cups unsalted raw almonds

Place almonds and peanuts in blender container, turn on blender with dial set to variable speed 1.  Slowly increase speed to 10.  Use the “Tamper” that comes with the Vitamix blender to keep pushing down the peanuts and almonds.  Blend for about 1 minute, then slowly turn dial back to 1.

YESSSS!  I have perfectly blended creamy peanut/almond butter with much less salt than store-bought peanut butter
