Pasta Salad With Chicken and Cheese

imageQuite possibly my favorite pasta salad and a real crowd pleaser.  I took a double batch to a dinner yesterday and came home with an empty dish.  Fortunately, I made extra to keep at home.  Looking forward to dinner tonight.

This is a great side dish, but can also be a main course on a hot summer day.  Tonight it is our main course with a lettuce salad and crescent roll.

While the pasta cooks, get the other ingredients chopped and ready – a fairly quick-to-make dish.

 

 

4 cups cooked pasta – your choice of type:  shell, macaroni (I used Rotini)

1/4 cup chopped celery

1/4 cup chopped onion (or adjust to your taste)

1/3 cup sweet relish

1 large can of Swanson’s chicken (I prefer white meat, but either will do)

1 8 oz. block of Colby cheese (or Cheddar)

1 & 1/2 cup Mayonnaise or Miracle Whip (adjust to your taste)

Directions:

Cook pasta according to package directions – do not overcook

Add remaining ingredients and stir to mix.  Chill a few hours and ENJOY!
