My Best Banana Bread Recipe (with or Without Nuts)

Okay, I know there are recipes galore out there for Banana Bread — on-line, in magazines, cookbooks, etc.  Maybe the last thing you want is another one.  But, trust me that this Banana Bread is worth trying!  It’s super moist, delicious, and quick to mix up (15 minutes from start to in the oven). 

I’ve been on a quest for the perfect Banana Bread recipe lately and tried many good ones.  I came across a recipe I used years ago which has turned out to be my personal favorite.  Why I put this recipe aside for a few years, I will never know.

These vintage pyrex dishes come in handy for individual loaves of nut bread.  A little cooking oil spray and the loaves come out of the dishes easily. I fill these about 2/3 full and adjust the baking time according to the size of dish I’m using.  (Just test with a toothpick in the center.)



Banana Nut Bread Recipe

1/2 cup cooking oil

1 cup sugar

2 eggs

3 ripe bananas (mashed)

2 cups flour
1 tsp. baking soda

1/2 tsp. baking powder

1/2 tsp. salt

3 Tablespoons of milk

1 tsp. vanilla extract

1/2 cup chopped nuts (I prefer walnuts in banana bread, but put your favorite)

Preheat oven to 350 degrees.  Sift together dry ingredients:  flour, baking soda, baking powder and salt and set that aside.  In medium mixing bowl beat cooking oil and sugar together; add eggs one at a time, then add mashed bananas.  Next add the milk and vanilla extract.  Stir in dry ingredients and chopped nuts.  Pour into greased loaf pan (9 x 5 x 3 inches) or individual size dishes.  Bake in 350 degree oven for about 1 hour.  For the individual loaves I started checking with a toothpick at about 30 minutes.  The smaller ones were done and the larger stayed in a bit longer.  Makes one loaf in a regular loaf pan or several mini loaves depending on the size of dishes you use.

I especially love banana bread for breakfast with my coffee.  One mini loaf went to a friend who is in in rehab to regain strength after surgery.  (Click link to see post.)
