Melt In Your Mouth Shortbread Cookies

IMG_1791I LOVE Shortbread Cookies, and I’m guessing you or someone in your household does too.  These are soooo incredibly easy to make – five ingredients.  More importantly, they are “melt-in-your-mouth” delicious.  It’s hard to eat just one or two of these soft, flavorful cookies.  You can roll them out and cut them in shapes with cookie cutters, drop them onto the cookie sheet by spoonsful, or put them through the cookie press for whatever shape you want.  I’ve been using this recipe for years and never even consider about trying a different shortbread recipe. 

Ready to get started!?! 

1 cup butter (soft but not runny)

1/2 cup powdered sugar

1/2 tsp. vanilla (or whatever flavoring you choose)

2 cups all purpose flour;

1/4 tsp. baking powder

colored sugar or sprinkles of some sort for decoration (optional)

Heat oven to 375 degrees. 

Cream butter, powdered sugar and vanilla together until fluffy.  Blend in flour about 1/2 cup at a time.  With the last 1/2 cup of flour I add in the baking powder. You do not need to beat much once you start adding the flour – mix on low speed or by hand.  Cool dough in refrigerator for at last 1/2 hour.  (This gives you a chance to start cleaning up the mess so clean up in the end is easier and quicker.)

Since Valentine’s Day is coming up soon, I used my cookie press with the heart-shaped disc (see pic below).  Press cookies from cookie press onto cookie sheet covered with parchment paper (parchment paper also optional).  Sprinkle with colored sugar or sprinkles as desired.  I got about 5 1/2 dozen small heart-shaped cookies.  Bake at 375 degrees for about 7 minutes until very lightly browned around the edges.  I start checking at 6 minutes and one sheet took 8 minutes. Cool on cookie sheet for a few minutes – keeping in mind that the cookies will continue to bake a little due to the heat of the cookie sheet.  These look so inviting on my heart-shaped plate.  These freeze well also.  In fact, some of these are going straight to the freezer to be included on the tray of treats I take to my office for Valentine’s Day.  I’m going to TRY to forget they are in there for the next week, otherwise they won’t make it to the tray of office treats.
