Delicious Pork Chops

Oh my goodness – these pork chops tasted even better than I thought they would – tender, delicious and so easy.  It’s time for a trip to the meat market and all I had in the freezer for Sunday dinner was a package of pork chops – seven to be exact.  I took an old stand-by recipe and tweaked it for pork chops.  And, I always use crockpot liners which make clean-up much quicker.

7 medium pork chops – bone in or boneless (which ever is your preference)

1 fresh apple

1 orange

1 cup orange marmalade

1 cup of barbecue sauce

1 tsp. soy sauce (I use law sodium)

1/4 cup water (or enough to keep enough liquid covering the meat)

Place pork chops in the crockpot; slice apple (leaving peel on); peel orange and divide into sections; place apple and orange pieces on top of the pork chops and cook in crockpot on high for about 3 hours.  Remove pork chops and discard the liquid, apple and orange slices from the crockpot.  Place pork chops back in crock pot, mix the orange marmalade, barbecue sauce, and soy sauce together and pour over pork chops.  Add a little water as necessary to keep enough liquid covering the meat.  Continue cooking on high for another 1/2 hour to hour or until tender.

(TIP – hating to waste any thing I spend money on, I was at the bottom of my bottle of barbecue sauce with just the part that doesn’t come out easily in the bottom.  I put just enough water in the jar to loosen up the sauce remaining in the bottle.  I give it a good shake and pour that into my crock pot.  I added about the same amount of extra orange marmalade so I would have an equal amount of each.  This gave me a little extra sauce and also kept me from throwing away any of the barbecue sauce that was in the bottle.)
