Best Banana Bread

imageIn search of a great Best Banana Bread recipe, I decided to create my own. I’ve given several loaves to friends for expert opinions, and this is by far the WINNER.  This best banana bread is moist and flavorful; everything that makes a delicious bread.  I usually double the recipe and have some for breakfast and a few loaves to put in the freezer to share with friends.

This is truly the best banana bread I have ever made – with or without nuts.

My Best Banana Bread

For breakfast with cream cheese, a little butter or just plain, this banana bread is a treat.  Every time my son comes over, he expects a loaf to take home.

I like to use these vintage pyrex dishes to make individual loaves to give away. This recipe freezes well, so you can keep a few on hand for a spur of the moment gift. A friend treated me to lunch for my birthday, so I grabbed one out of the freezer for a thank you. Another friend just had surgery, so I took a couple loaves over for her to have an easy breakfast.

Wrapped in a cellophane gift bag and tied with a ribbon, this best banana bread makes a special treat for someone.

A great treat for a friend

Try it; I think you will agree!
RECIPE

1/2 cup vegetable oil
1 cup of sugar
2 eggs
3 ripe bananas – mashed
2 cups all purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
3/4 tsp. cinnamon
1/2 tsp. vanilla extract
3 TBSP. milk
1/2 cup chopped nuts (optional)

Preheat oven to 350 degrees and spray baking pans or dishes with non stick coating.

Cream oil and sugar, add eggs and bananas, add milk and vanilla mix well, stir in dry ingredients.  Bake in one 9 x 3 x 5 loaf pan.  For smaller individual loaves, fill dishes 2/3 full.  Adjust baking time down for smaller dishes.  Bread is done when a toothpick comes out clean.  Do not over bake.
